Oman / Dried Lime
Dried Limes or limoo Omani are a distinctive ingredient historically made by blanching the “true limes” of Malaysia in saltwater and then drying them in the sun. They come in a range of color from light brown to black and will last for up to two years. While their color makes little difference in flavor, characteristics to look for are ; that they are completely dry with no soft spots, sound hollow when tapped, free of mold on the inside with a papery, slightly gummy flesh.
Prized for their flavor, they add a distinctive tangy, but sweet flavor with smoky, earthy notes rounded out by a touch of bitterness. They were also used for their ability to help preserve food in warm climates. Bedouin women used the limes to dye yarns.
